Tian Tian Hainanese Chicken Rice (Jewel Changi Airport)

Tian Tian Hainanese Chicken Rice has opened an outlet at Jewel Changi Airport, at #B2-243 and 244, trading daily from 10:00am to 10:00pm as listed in Jewel's official dining directory. A soft-opening period began on 11 August 2026 with 20% off for early diners until 17 August, and the grand opening is set for 22 August 2026. The brand began in 1986 as a single stall at Maxwell Food Centre, started by Madam Foo Kui Lian and her elder brother. Singapore Global Network's 7 August 2025 profile records that history, the late Anthony Bourdain's praise for the rice, and the 2013 Hawker Heroes Challenge appearance against Gordon Ramsay. Tian Tian is listed as a Bib Gourmand in the current MICHELIN Guide Singapore. The original Maxwell stall is a separate Forkin listing, recorded as established 1986. A Jewel Signature Exclusive menu is offered daily at this outlet only. It includes the Tian Tian Heritage Platter for two to three, with ngoh hiang, Hainanese pork chop, Thai-style fried tofu, tiger-prawn beancurd rolls and fried salad prawns; Madam Foo's Steamed Chicken Curry, a homemade curry ladled over the signature steamed chicken with a choice of chicken rice, white rice, yellow noodle, thick vermicelli or baguette; Nanyang Golden Chicken, marinated in turmeric and curry leaves then fried crisp; and Crystal Chicken Feet, the boneless glass chicken feet the Maxwell stall sold from 1986. For the grand opening the brand will give away 88 complimentary takeaway packets of its signature chicken rice on each of 22 and 23 August 2026, while stocks last. A limited-edition Tian Tian Blind Box Series of four collectible plush keychains — Chopping Board, Chicken, Chilli Bowl and a special-edition Chicken Rice Plate — is offered from 22 August on a purchase-with-purchase basis: S$10.80 with any S$30 spend in-store, or all four designs for S$38.88 with no duplicates. One claim in the launch material does not hold up. The press release presents this as the brand's first-ever flagship. Singapore Global Network's 2025 profile describes the Maxwell stall as the flagship and records existing outlets at Simpang Bedok, Clementi, Lucky Plaza and Bishan. Forkin describes this simply as the brand's Jewel Changi Airport outlet and does not publish the first-flagship claim. Jewel's own directory also dates the Bib Gourmand run 2016 to 2025 rather than through 2026, and neither the 2009 second-generation handover nor the specific 2013 contest result could be independently confirmed. Launch details and images were supplied by the venue's PR representative. No editorial stamp and no Forkin Score has been issued for this outlet.

restaurant

Mala Mia

Mala Mia is a build-your-own mala concept in the public area of Changi Airport Terminal 3, at #B2-49/50 — the same basement level as 886 Taiwan Yè Shì and, according to its press release, from the same chef. It is not open yet: the press release gives a grand opening of 14 August 2026, with media tastings on 4 and 11 August. The Changi Airport official dining directory already lists the unit, with daily hours of 10:30am to 10:30pm and a customisable mala offering. Diners assemble a bowl at a fresh-ingredient station — leafy greens, mushrooms, lotus root, broccoli, meats, seafood, tofu and noodles — then choose a base, set a heat level of mild, medium or extra, and have the bowl weighed and wok-tossed to order. The brand says its point of difference is the base rather than the build. The line-up it describes: a rich 'Carbonara Cream Dry' mala; a 'Tom Yum Mala' folding Thai sour-spice and lemongrass into Sichuan numbing spice; collagen soups in mala, chicken and tomato; a classic wok-tossed stir-fry mala for purists; and a non-spicy base. A self-serve drinks bar is offered at a S$3.90 top-up for free flow. Listed sides are La Zi Ji, spicy oil dumplings, Sichuan pepper corn fries and cooling pao cai, with vegetarian-friendly items marked on the menu. An opening promotion called 'Guess the Weight' runs from 14 to 31 August 2026: guess your bowl's weight within the correct 10g range before paying and the bowl is 61% off — a reference to Singapore's 61st birthday. The brand attributes the concept to Chef Choong Wei Foong and uses the tagline 'so shiok it hurts'. Readers should know how thin the outside evidence is. Everything above except the unit, the hours and the general customisable-mala concept comes from the venue's own press release: Forkin found no dated independent coverage of Mala Mia as at 11 August 2026. The press release also characterises the wider mala trade's reliance on ready-made base sauces; that is the brand's claim about its competitors, and Forkin does not repeat it as fact. No editorial stamp and no Forkin Score has been issued.

The City Bakery (Mandarin Gallery)

WORTH A LOOK. Read what public coverage says for The City Bakery (Mandarin Gallery).

The City Bakery, a bakery/cafe brand founded in New York in 1990, opened its first Singapore outlet and first Southeast Asia outpost at Mandarin Gallery on 13 August 2026. restaurant

Tembusu

Tembusu is a 'Borderless Straits' dining house in the Ginger Garden of the Singapore Botanic Gardens, at 1 Cluny Road — Singapore's first and only UNESCO World Heritage Site. It is the newest concept from Fleursophy Group, founded by Nicole Chen. It soft-opened on 3 August 2026; the press release gives an official launch of 3 September 2026 and a main menu served from 8am to 9pm. The name is not decorative. The native tembusu appears on the reverse of Singapore's five-dollar note, and the best-known specimen in the Gardens is estimated at more than 200 years old. The group describes the interior as 'Straits Maximalism': illustrated surfaces climbing the walls and pitched ceiling, dark beams cutting through scenes of foliage and figures, woven pendants hung at different heights, sculptural fans and monumental timber columns rising through the rooms. A crimson-and-cream painted passage wraps walls and ceiling between rooms, and the house opens into a garden-facing conservatory framed by tall black window grids. The opening menu starts with Homemade Kaya Pullman Toast and Tembusu Nasi Lemak — chicken leg berempah, blue-pea basmati rice, house sambal, achar and a sunny-side egg — then travels: Squid Ink Claypot Rice with pacific abalone, sakura ebi, beijing cabbage and sweet white corn; Udon Laksa with Andaman sea prawn, surimi, sakura ebi and quail egg; an Otak-Otak Slider with kaffir lime aioli on a toasted brioche bun; and deboned Stuffed Chicken Wings, grilled and served with Hainanese chilli. Modern Nanyang Brews use Gia Lai Highlands beans roasted in Singapore. A launch gift programme runs in two acts, while stocks last: a hand fan with S$60 spend from 3 to 17 August, then a tote bag with S$80 spend and a foldable umbrella with S$180 spend from 3 to 10 September. Fleursophy's own site confirms Nicole Chen as founder and lists sibling brands Café de Nicole's Flower, Le Jardin, Under Der Linden, Ce Soir, Ember and Yānhuo. Two caveats belong with this listing. Forkin found no dated independent editorial coverage of Tembusu's opening as at 11 August 2026, so the description above rests on the venue's own material. And the NParks Singapore Botanic Gardens dining page, last updated 7 August 2026, does not list Tembusu; for the Ginger Garden it lists The Bloomhouse by Little Farms, which CNA Lifestyle reported on 29 July 2026 had taken over the former Halia restaurant space. Forkin therefore records the address without a unit number and makes no claim about which structure Tembusu occupies, or about any previous tenant. No editorial stamp and no Forkin Score has been issued.

KOKO

Formerly KOKO Cafe & Patisserie at Tras Street, the cafe has relocated to Coliwoo Midtown at Middle Road, shortened its name to KOKO, and pared its menu down to focus on Japanese-style shortcakes (strawberry, mango, melon, gold kiwi).

restaurant

886 Taiwan Yè Shì

886 Taiwan Yè Shì is a Taiwanese street-eats restaurant in the public area of Changi Airport Terminal 3, at #B2-40/40A. It held a media and KOL soft opening on 15 July 2026 and opened to the public on 20 July 2026, trading daily from 10:30am to 10:30pm — the same hours carried by the Changi Airport official dining directory. The room is built around a replica full-size vintage Taiwanese train cabin, with railway tracks running across the floor, a Shifen-inspired station platform, a 台灣廚房 'Taiwan Kitchen' neon sign and sky lanterns overhead. The design references the railway towns and night markets of Taiwan. Eatbook.sg and HungryGoWhere, both of which visited on hosted tastings, describe the train cabin and lantern treatment in their coverage. The kitchen serves hand-pulled la mian in long-simmered broths, including Jiang Mu Ji La Mian (姜母鸡拉面) and Hong Shao Beef La Mian (红烧牛肉拉面), alongside XXL Taiwanese fried chicken cutlets, flaky cong zhua bing, xiao long bao, signature rice bowls, mala fries, sweet-potato fries and bubble tea shaken to order. The venue also runs a Shifen-inspired sky-lantern wish feature, where guests write a wish and see it appear on a lit wall. HungryGoWhere describes this as a QR-based virtual submission. The press release calls the restaurant the only place in Singapore to take part in Shifen's lantern ritual; Forkin found no independent support for that exclusivity claim and does not repeat it. 886 is the first restaurant of its two founders, Singapore F&B veterans Chef Choong Wei Foong and Lin Xinyi Denise, each with close to two decades in the trade. Quotes attributed to the founders in the accompanying media backgrounder are marked by the sender as illustrative and still to be confirmed, so Forkin publishes none of them. Forkin has issued no editorial stamp and no Forkin Score for this listing. The launch information came from the venue's PR representative and the two independent reviews available were hosted visits; neither meets the independence bar Forkin requires before it scores a venue.
