The longer version
DOMO occupies Level 3 of Fairmont Singapore at 252 North Bridge Road, #03-00. Its official website identifies Rose Ang as Executive Chef and describes the cooking as robatayaki-inspired modern Japanese with European influences. CNA Luxury’s April 2025 profile provides background on Ang and the opening of her Singapore restaurant. The current official menu offers several ways to order: set lunch, à la carte dishes and a Signature Tasting Menu. The Executive Sashimi Set includes nine pieces of chef-selected sashimi, salad, chawanmushi, Japanese rice, miso soup and dessert. À la carte examples include Wagyu beef kimchi gyoza, sashimi tacos, crispy halibut with yuzu truffle sauce and Miyazaki A5 Wagyu striploin. The S$88 tasting menu requires a minimum order of two sets; its printed courses include salmon tataki, tuna sashimi taco, gyoza, halibut, robata beef tenderloin, mushroom baked rice and dessert.
