Mala Mia

Mala Mia is a build-your-own mala concept in the public area of Changi Airport Terminal 3, at #B2-49/50 — the same basement level as 886 Taiwan Yè Shì and, according to its press release, from the same chef. It is not open yet: the press release gives a grand opening of 14 August 2026, with media tastings on 4 and 11 August. The Changi Airport official dining directory already lists the unit, with daily hours of 10:30am to 10:30pm and a customisable mala offering. Diners assemble a bowl at a fresh-ingredient station — leafy greens, mushrooms, lotus root, broccoli, meats, seafood, tofu and noodles — then choose a base, set a heat level of mild, medium or extra, and have the bowl weighed and wok-tossed to order. The brand says its point of difference is the base rather than the build. The line-up it describes: a rich 'Carbonara Cream Dry' mala; a 'Tom Yum Mala' folding Thai sour-spice and lemongrass into Sichuan numbing spice; collagen soups in mala, chicken and tomato; a classic wok-tossed stir-fry mala for purists; and a non-spicy base. A self-serve drinks bar is offered at a S$3.90 top-up for free flow. Listed sides are La Zi Ji, spicy oil dumplings, Sichuan pepper corn fries and cooling pao cai, with vegetarian-friendly items marked on the menu. An opening promotion called 'Guess the Weight' runs from 14 to 31 August 2026: guess your bowl's weight within the correct 10g range before paying and the bowl is 61% off — a reference to Singapore's 61st birthday. The brand attributes the concept to Chef Choong Wei Foong and uses the tagline 'so shiok it hurts'. Readers should know how thin the outside evidence is. Everything above except the unit, the hours and the general customisable-mala concept comes from the venue's own press release: Forkin found no dated independent coverage of Mala Mia as at 11 August 2026. The press release also characterises the wider mala trade's reliance on ready-made base sauces; that is the brand's claim about its competitors, and Forkin does not repeat it as fact. 886 Taiwan Yè Shì

886 Taiwan Yè Shì is a Taiwanese street-eats restaurant in the public area of Changi Airport Terminal 3, at #B2-40/40A. It held a media and KOL soft opening on 15 July 2026 and opened to the public on 20 July 2026, trading daily from 10:30am to 10:30pm — the same hours carried by the Changi Airport official dining directory. The room is built around a replica full-size vintage Taiwanese train cabin, with railway tracks running across the floor, a Shifen-inspired station platform, a 台灣廚房 'Taiwan Kitchen' neon sign and sky lanterns overhead. The design references the railway towns and night markets of Taiwan. Eatbook.sg and HungryGoWhere, both of which visited on hosted tastings, describe the train cabin and lantern treatment in their coverage. The kitchen serves hand-pulled la mian in long-simmered broths, including Jiang Mu Ji La Mian (姜母鸡拉面) and Hong Shao Beef La Mian (红烧牛肉拉面), alongside XXL Taiwanese fried chicken cutlets, flaky cong zhua bing, xiao long bao, signature rice bowls, mala fries, sweet-potato fries and bubble tea shaken to order. The venue also runs a Shifen-inspired sky-lantern wish feature, where guests write a wish and see it appear on a lit wall. HungryGoWhere describes this as a QR-based virtual submission. The press release calls the restaurant the only place in Singapore to take part in Shifen's lantern ritual; Forkin found no independent support for that exclusivity claim and does not repeat it. 886 is the first restaurant of its two founders, Singapore F&B veterans Chef Choong Wei Foong and Lin Xinyi Denise, each with close to two decades in the trade.
